1. Creamy Tomato Pasta
Ingredients:
1 box of pasta (spaghetti, penne, or whatever you have)
1 can of tomato sauce or diced tomatoes
1/4 cup cream (substitute milk or a non-dairy option if needed)
2 tbsp olive oil or butter
1 tsp garlic powder
1 tsp dried basil or Italian seasoning
Salt and pepper to taste
Instructions:
Cook the pasta according to the package instructions. Reserve about 1/2 cup of the pasta water before draining.
In a saucepan, heat olive oil or butter over medium heat. Add the tomato sauce and season with garlic powder, basil, salt, and pepper.
Stir in the cream and a splash of the reserved pasta water to create a silky sauce.
Combine the sauce with the drained pasta, tossing to coat evenly. Serve warm with grated Parmesan cheese, if available.
2. Pantry Chili
Ingredients:
1 can of beans (kidney, black, or pinto)
1 can of diced tomatoes
1 can of corn (optional)
1 small onion or 1 tsp onion powder
1 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
Salt and pepper to taste
Water or broth (as needed)
Instructions:
If using a fresh onion, dice it and sauté in a pot with a little oil until softened.
Add the diced tomatoes, beans, corn, and about 1/2 cup of water or broth.
Stir in chili powder, cumin, garlic powder, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.
Serve on its own or with toppings like shredded cheese, sour cream, or tortilla chips.
3. Rice and Bean Burrito Bowl
Ingredients:
1 cup of rice (white, brown, or instant)
1 can of black beans or pinto beans
1 can of diced tomatoes (optional)
1 tsp cumin
1 tsp paprika
1/2 tsp chili powder
Salt and pepper to taste
Any additional toppings: salsa, shredded cheese, hot sauce, or avocado
Instructions:
Cook the rice according to package instructions.
In a saucepan, heat the beans (and diced tomatoes if using). Season with cumin, paprika, chili powder, salt, and pepper.
Assemble your burrito bowl by layering rice at the bottom, then topping with beans and any additional toppings you have on hand.
